Authentic Whole Hog Catering
Rob is a 2nd generation whole hog cook!
He helped his dad on quite a few occasions at an early age – when people in the Regina area wanted a Pig Roast, Barry was there. Since picking up the BBQ bug, Rob has advanced the cooking techniques to a level unseen in the province before. Rob developed his championship pork injection in competition and uses it in his hogs to add moisture and flavor deep inside the delicate meat of the hog.
In early 2014, Rob travelled to Murphysboro, Illinois to take advantage of a very unique whole hog event. Rob learned, first hand, the cooking process used by some of the best hog cooks in the world. Pitmasters at this event included Mike Mills, Patrick Martin, Brad Orrison, John Delpha, and Sam Jones. It was an investment of time and money to ensure that our clients continue to receive first-class catering services from our business in the prairies.
We are often asked how many people a hog feeds – there is no answer. For a small crowd, we will serve a small hog. For a large crowd, we will cook multiple large hogs. We also recommend adding a second meat such as BBQ chicken to give your guests some variety since some may not appreciate seeing a whole animal on the buffet table. Please inquire about custom menus.
We source our hogs through a Regina butcher, who utilizes smaller Saskatchewan producers. The quality of the pork is high and we can order to our own specifications.
Whole Hog / Pig Roast pricing (for 100-200 people).
1) Fully Catered Event: We will smoke a hog for you at your event, including all the sides and other meats. This process can take 8-16 hours. The hog will be transported to your buffet table, and garnished with greenery and fresh fruit. We will carve the hog for your guests as they move through the buffet line and we will clean up all the mess when we leave. We will bring a custom built stainless steel pan to capture all the grease and mess.
Price: $27.50 per person. Includes BBQ pit beans, Apple Cider Coleslaw, tossed salad (mixed greens) and plates, cutlery, condiments, and napkins.
2) Drop & Serve Event: (more inexpensive option) We will smoke a hog for you at our home base, and deliver the hot hog and all the food to your event. We will carve the hog for your guests as they move through the buffet line and we will clean up all the mess when we leave. We will bring a custom built stainless steel pan to capture all the grease and mess.
Price: $22.00 per person. Includes BBQ pit beans, Apple Cider Coleslaw, tossed salad (mixed greens) and plates, cutlery, condiments, and napkins.
3) Hog-drop Event: We will smoke a hog for you at our home base, and deliver the hot hog ready for you to set up and carve. We can explain at the time of delivery how to carve the hog. You will provide your own table, knives, side dishes, and cleanup. We recommend a sheet of plastic on the table, and under the table, to make cleanup easier. A 50% deposit is due at time of booking, with the balance due 2 weeks before (or by cash at the time of delivery).
Price: 40-60 people: $20.00 per person. 61-80 people: $17.50 per person. 81-100 people: $16.00 per person 101-140 people: $13.00 per person
